Chef’s Job Description:

As a Chef, you will be responsible for creating exceptional culinary experiences for our guests at Alaska Sea Adventures while navigating the unique challenges and constraints of working on a marine vessel. Your ability to adapt, think creatively, have a positive attitude, and deliver outstanding meals will contribute to the overall enjoyment of our passengers' journey on our luxury adventures cruise through Southeast Alaska.

Responsibilities:

  • Plan and execute menus for various meals based on the Pre-cruise planner that guests fill out before their trip. There are 8-10 guests and 4 crew totaling 12-14 people aboard the boat. You must consider dietary restrictions, guest preferences, and available ingredients while adhering to the boat's facilities and resources.
  • The chef must be able to cook while we are underway as we are often traveling to our next destination. We try not to travel in rough waters, but there will be times when it may get a little rough.
  • Prepare and cook a wide range of dishes that include salmon, halibut, black cod, shrimp, and crab, including appetizers, entrees, and desserts, emphasizing taste, presentation, and efficient use of space and equipment.
  • Manage and monitor food inventory, go grocery shopping between trips, ensure timely provisioning, and minimize waste while maintaining quality and freshness.
  • Adhere to strict food safety and sanitation regulations, implementing proper handling, storage, and hygiene practices to ensure the well-being of passengers and crew.
  • Collaborate with the boat's captain and crew to create specialized menus for special guest occasions such as birthdays or anniversaries while making it a memorable dining experience.
  • Maintain a high level of performance and a kind and respectful attitude in a confined and dynamic work environment with the guests and crew. The kitchen is an open galley concept, so guests will be near you in the kitchen, watching you cook and conversing.
  • Maintain cleanliness and organization in the galley, optimizing storage space and implementing efficient workflows.
  • Work closely with the boat's captain and crew to coordinate meal service, including proper timing and logistics, and exceptional guest experiences, as the Alaskan seafood and cuisine is a large part of the guest's experience.
  • Stay updated on culinary trends, techniques, and innovations, adapting them to the boat's unique setting and enhancing the overall dining experience.
  • We do not allow our crew members to discuss tipping with our guests. Tipping is done based on the crew's performance, and it is up to the guest to evaluate that performance. Tips are split between the four crew members. We encourage a suggested tip amount of 10-20% in our client's contract.

Requirements:

  1. Proven experience as a Chef or in a similar culinary role, preferably with experience working on boats or in other unique environments.
  2. A culinary degree or relevant certification from an accredited culinary school is preferred.
  3. In-depth knowledge of cooking seafood, ability to bake homemade cookies and desserts, food safety and sanitation regulations, with the ability to adapt them to a boat's specific constraints.
  4. Strong leadership and communication skills, with the ability to effectively collaborate with the other crew members in a confined space.
  5. Ability to think creatively and problem-solve in a resource-constrained environment, adapting menus and techniques to the boat's facilities and the guest's preferences.
  6. Excellent time management and organizational skills, with the ability to plan and execute multiple meals while considering the boat's itinerary and guest requirements.
  7. Flexibility to work in a dynamic environment, adapting to changing weather conditions and guest preferences.
  8. Physical stamina and ability to work in a confined space, longer hours, maintaining balance and composure while the boat is in motion.
  9. A negative drug test is required upon hiring.
  10. We have a zero-tolerance policy for drugs and or alcohol aboard the boat.

Work Experience Requirements:

All applicants must have previous experience in working on a Yacht or a Cruise Ship.

Language Requirements:

Good knowledge of the English language is required.
